For the Cobbler Topping
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ½ cup milk
- 1 teaspoon vanilla extract
Optional Topping
- 1 tablespoon melted butter
- 1 tablespoon brown sugar
- A light sprinkle of cinnamon
- Vanilla ice cream, for serving
Step-by-Step Instructions
1. Prepare the peaches
Preheat your oven to 375°F (190°C).
Peel the peaches and cut them into thin wedges. If your peaches are very ripe and juicy, you can leave the skins on if you prefer a more rustic cobbler.
Place the sliced peaches in a large mixing bowl.
2. Make the peach filling
Add the granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, vanilla extract, flour or cornstarch, and salt.
Gently toss everything together until the peaches are evenly coated.
Let the mixture sit for about 10 minutes. This allows the peaches to release some of their natural juices and creates a delicious syrupy filling.
3. Transfer the peaches to your baking dish
Lightly grease a 9 × 13-inch baking dish or a similar-sized casserole dish.
Pour the peach mixture into the dish and spread it evenly.
Don’t worry if there seems to be quite a bit of juice—that sauce will become wonderfully thick and syrupy as the cobbler bakes.
4. Make the cobbler topping
In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
Add the cold cubed butter.
Using a pastry cutter, fork, or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs. A few small pieces of butter are perfectly fine and will help make the topping tender.
5. Add the milk and vanilla
Pour in the milk and vanilla extract.
Stir gently just until the ingredients come together and a soft dough forms.
Don’t overmix. Overmixing can make the topping dense instead of light and tender.
6. Add the topping to the peaches
Drop spoonfuls of the dough evenly over the peach filling.
You don’t have to completely cover every inch of the peaches. Leaving a few small spaces allows the bubbling peaches to peek through while baking.
For extra cinnamon flavor, mix the brown sugar and cinnamon together and sprinkle it lightly over the top.
7. Bake
Place the cobbler in your preheated oven and bake for approximately 40–50 minutes.
It’s ready when:
- The peach filling is bubbling around the edges.
- The topping is golden brown.
- The center of the topping looks cooked rather than wet.
- Your kitchen smells wonderfully like cinnamon and baked peaches.
If the top starts browning too quickly, loosely cover the dish with aluminum foil for the remainder of the baking time.
8. Let it rest
Remove the cobbler from the oven and let it cool for 15–20 minutes.
This step is important because the peach juices will thicken as the cobbler rests. If you serve it immediately, the filling may be more liquid.
9. Serve warm
Spoon generous portions of the warm peach cobbler into bowls.
For the ultimate dessert, add a scoop of vanilla ice cream on top. The cold, creamy ice cream slowly melts into the warm cinnamon-peach filling, creating the perfect combination.
⭐ Tips for the Best Peach Cobbler
- Use ripe peaches: They provide the best flavor and natural sweetness.
- Frozen peaches work too: Thaw and drain them first so the cobbler doesn’t become excessively watery.
- Don’t overmix the topping: A little tenderness comes from keeping the dough just combined.
- Cold butter is important: It helps create a softer, more textured topping.
- Adjust the sugar: Very sweet peaches may need less sugar; tart peaches may need a little more.
- Let it rest: Giving the cobbler 15–20 minutes to cool helps the filling set.
- Serve it warm: It’s at its best while still slightly warm.
🍨 Storage
Cover leftover cobbler and refrigerate for up to 3–4 days.
To reheat, place an individual serving in the microwave for about 30–60 seconds, or warm the entire dish in a 325°F (165°C) oven until heated through.
For an extra-special treat, add fresh vanilla ice cream just before serving.
