This Golden Chipotle Grain Bowl with Cabbage is a colorful, satisfying meal packed with smoky chipotle flavor, tender grains, crisp cabbage, roasted vegetables, creamy avocado, and a bright homemade dressing. Ingredients

For the grain bowl:

  • 2 cups cooked quinoa, brown rice, or farro
  • 2 cups shredded green or purple cabbage
  • 1 cup corn, fresh or frozen
  • 1 bell pepper, sliced
  • 1 small red onion, sliced
  • 1 avocado, diced
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin

For the golden chipotle sauce:

  • 1/2 cup Greek yogurt or sour cream
  • 1–2 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon adobo sauce
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • 1 teaspoon honey or maple syrup
  • Salt to taste
  • 1–2 tablespoons water, as needed

Optional toppings:

  • Crumbled feta or cotija cheese
  • Pumpkin seeds
  • Pickled jalapeños
  • Lime wedges
  • Extra cilantro
  • Sliced green onions

Step-by-Step Instructions

1. Cook the grains

Start by preparing your favorite grain. Quinoa, brown rice, and farro all work beautifully in this bowl.

If using quinoa, rinse it thoroughly before cooking. Combine 1 cup dry quinoa with about 2 cups water, bring to a boil, then reduce the heat and simmer until tender. Let it rest for several minutes before fluffing with a fork.

For extra flavor, cook the grains in vegetable or chicken broth instead of water.

2. Prepare the vegetables

While the grains cook, slice the bell pepper and red onion. Shred the cabbage if you haven’t purchased pre-shredded cabbage.

Keep the cabbage fairly thin so it has a pleasant crunch without being difficult to eat.

Drain and rinse the black beans and prepare the corn.

3. Roast the vegetables

Preheat your oven to 425°F (220°C).

Place the bell pepper, red onion, and corn on a baking sheet. Drizzle with olive oil and sprinkle with salt, garlic powder, and cumin.

Toss everything until evenly coated.

Roast for approximately 18–25 minutes, stirring once halfway through. The vegetables should become tender with lightly browned edges.

For an even smokier flavor, allow the vegetables to develop some dark caramelized spots.

4. Make the golden chipotle sauce

Add Greek yogurt, chopped chipotle peppers, adobo sauce, lime juice, smoked paprika, turmeric, garlic powder, and honey or maple syrup to a small bowl.

Stir until smooth.

Taste and adjust the seasoning. Add more lime juice for brightness, more chipotle for heat, or a little honey if you prefer a sweeter sauce.

If the sauce is too thick for drizzling, mix in water one tablespoon at a time until it reaches your desired consistency.

5. Prepare the cabbage

Place the shredded cabbage in a large bowl.

Add a small pinch of salt and squeeze in a little fresh lime juice. Gently massage the cabbage with clean hands for about 30 seconds.

This softens the cabbage slightly while keeping its signature crunch.

For extra flavor, you can add a teaspoon of olive oil and a sprinkle of cumin.

6. Warm the black beans

Place the black beans in a small saucepan over medium-low heat. Add a tablespoon or two of water, a pinch of cumin, and a little garlic powder.

Warm for approximately 3–5 minutes, stirring occasionally.

You want the beans heated through without drying them out.

7. Build the grain bowls

Divide the cooked grains between four bowls.

Arrange the roasted vegetables, seasoned cabbage, black beans, and diced avocado around the grains.

Try keeping the ingredients in separate sections for a colorful presentation, or toss everything together for a more casual bowl.

8. Add the golden chipotle sauce

Drizzle the creamy golden chipotle sauce generously over each bowl.

The combination of smoky chipotle, bright lime, earthy turmeric, and creamy yogurt gives the bowl a bold flavor without overpowering the fresh vegetables.

9. Add your favorite toppings

Finish each bowl with fresh cilantro, crumbled feta or cotija cheese, pumpkin seeds, pickled jalapeños, and sliced green onions.

Serve with a fresh lime wedge for an extra burst of citrus.

Helpful Tips

  • Make it spicy: Add an extra chipotle pepper or a pinch of cayenne.
  • Make it milder: Use only a little adobo sauce and skip the chipotle pepper.
  • Add protein: Grilled chicken, shredded chicken, tofu, shrimp, or roasted chickpeas make excellent additions.
  • For meal prep: Keep the avocado and sauce separate until you’re ready to eat.
  • For extra crunch: Add toasted pumpkin seeds or crushed tortilla chips.
  • For a vegan bowl: Use plant-based yogurt and maple syrup instead of honey.

Storage

Store the cooked grains, roasted vegetables, cabbage, beans, and sauce in separate airtight containers in the refrigerator. The components should keep well for several days when properly refrigerated.

Add fresh avocado, cilantro, and sauce just before serving for the best texture and flavor.

Serving Suggestion

Serve this bowl warm or at room temperature with plenty of fresh lime. The contrast between warm golden grains, smoky roasted vegetables, crisp cabbage, creamy avocado, hearty black beans, and spicy chipotle sauce makes every bite satisfying.

It’s a simple, colorful, customizable meal that works especially well for quick weeknight dinners, healthy lunches, vegetarian meals, and make-ahead meal prep.
